Garam Masala Potatoes & Black-eyed Peas Miso Soup


Garam Masala Potatoes 
(the yellow grains are actually cous cous)
 
A friend from India shared this recipe with me. It's quite easy actually.

1.  Add some water to garam masala powder to make a sauce.
2. Add paprika and cayenne to the sauce.
3. Fry ginger and dried chilies until they they become fragrant.
4. Add sauce to frying pan. Stir fry.
5. Add potatoes (pre-cooked), tomatoes and carrots to the pan. Continue to stir fry and make sure sauce is well-mixed.
6. Add some water so that the gravy will not become too dry or thick.
7. Add salt according to taste.
8. Sprinkle a tiny bit of sugar to enhance the flavour. You can actually add cashew nuts for protein and crunchiness.
9. Ready to serve.

Black-eyed Peas Miso Soup
1. Soak peas overnight.
2. Boil peas until half soft. Add carrots.
3. Turn down the heat once carrots start to become soft.
4. Add a teaspoonful of cooking oil.
4. Add seaweed and cook for just 2-3 minutes.
5. Add miso paste and stir well.
6. Ready to serve.
