Two new creations

I haven't been blogging much this month. Was caught up with "R & R" .... no, not "relaxation and recreation" but "reading and research"! One good way to resume the blog would be to update it with something lighter and pleasurable. What else but food?

This evening, I decided to try out two new dishes without referring to any recipe. I'm glad they turned out to be fine.

1. Fried Beetroot with Kalamata

 
Bought the beets from Sainsbury's. They were pre-cooked and packed air-tight.  I have gotten so used to consuming it as a juice or salad topping. So I really can't imagine anything else other than these two possibilities. Initially, I wanted to try cooking beetroot soup but decided that it would be too troublesome.  And I seriously can't imagine it to be a soup! Since beet is sweet, would the end result taste like red bean paste?

Moreover, the blender looks quite pathetic now and seems to have collected stubborn food stains from previous usage. It's absolutely not necessary to show it here. Hence while slicing the beets halfway, I thought we could do with a stir-fried dish with tomatoes, carrots. and bay leaves. Then a crazy idea came to my mind. I added kalamata, a black olive paste preserved in olive oil to the dish. I'm not sure how others will take to this dish, because some people just dread the earthy taste of beets. But I do like it.

2. Portabello creamy mushroom soup

 

I had thought of of stir-frying portabelloes with black-pepper and milk at first but ended cooking a soup instead. Cheese slices and corn flour with water were added to make it creamy and thick.  Without the blender, one can chew on the succulent portabelloes fried with olive oil, butter, thyme and rosemary. This one's lovely.
